    Easy dairy-free green smoothie

    This green smoothie is incredibly easy, tasty and completely dairy-free. It's sweet enough to enjoy easily, but without any added sugar and lots of green goodness.

    Imagine the scene: I am standing in the kitchen, passing a glass back and forth between my two boys for them to have a sip. My four year old exclaims "that's yummy! It's so tasty." Meanwhile my one year old points excitedly and goes "yum yum yum" which is his way of saying he wants more to eat or drink. And the glass is full of this green smoothie.

    If ever you needed proof it's good, that is probably it.

    Green smoothies have felt like a bit of a trend I've come to the party late on. While I like the idea of having more greens, I wouldn't say I was mad on them by any means. However I have tried a few and this one was both too easy and tasty not to share. Other than the color, you wouldn't really know this was a green smoothie as it doesn't taste of green stuff at all.

    Let me maybe elaborate a bit on why I am not mad on green smoothies in general. While I completely understand the craze on them has been largely that they are a great way to get all the fantastic nutrients from green vegetables quickly, some green smoothies feel like hard work and have a weird aftertaste.

    To me healthy eating shouldn't be a chore. Pineapple is a great ingredient to balance out the greens so is part of what makes this green smoothie one I think is worthy of drinking both to enjoy it, and get the health benefits.

    This is a smoothie that separates a little, but if you give it a slight stir it comes back together easily and it doesn't impact the taste. It's deliciously sweet from the pineapple and apple and has a nice not-too-thick consistency.

    I was planning to share this soon anyway, but conveniently it fits in perfectly for Angie's Fiesta Friday Healthy Recipe Challenge. I know a smoothie is probably about the easiest way to combine greens and pineapple, as we were asked to do, so I do want to work on something else to challenge myself a little more. But for now, I'll be sharing this since it would be silly not to.

    This dairy-free green smoothie really is delicious, as well as incredibly quick and easy to make. Toddler and preschooler approved as well, which definitely says something. Tasty, quick and healthy - what better combination could there be?

    Ingredients

    • 1 cup spinach leaves packed, 30g, tough stems removed
    • 1 rib celery , roughly chopped
    • ¾ cup apple juice 180ml
    • 1 cup frozen pineapple 120g

    Instructions

    • Blend everything together and serve.

      I have an iron deficiency and I need more spinach in my life, I'm not a big fan of frozen pineapple but I added 1 cup of apple juice instead. Overall its great, and you don't really have the string from the celery. I will definitely make this again in the future.

      When my son was still living at home, we did a lot more smoothie. He's the picky eater and smoothies were my way of getting him to "eat" his fruits and veggies. Now that we haven't had it for a while, I'm actually craving it! And this one is simple with a few ingredients to make in just minutes. Perfect! I'll get to it right away. Yum, yum!! ??
