    Blueberry apple smoothie

    I go through phases where we don't really have smoothies at all. Then once we have one, the kids are asking for them al the time. So, I experiment a bit to see what works well, both in my opinion and theirs. Everyone in the family was an instant fan of this one!

    Smitten with smoothie bowls

    I admit, I was a latecomer to smoothie bowls. I'd initially scoffed at the idea - it seemed a little pretentious if I'm honest - but then I thought why not, if you make the smoothie a little thick then it's actually easier to eat with a spoon.

    Plus, you can do toppings.

    I got the idea of making a smoothie bowl that was like a fruit crumble or crisp, with a little bit of a crunchy topping. Apple and blueberry seemed like the perfect combination. They're both ingredients that are healthy and taste delicious, worked well together, plus the blueberry color is amazing.

    Top tip: frozen berries work well

    You can use either fresh or frozen berries, but I really like frozen for a couple reasons. First, it's easier to not waste part of a packet, but also the colder temperature is really nice in there.

    Wild blueberries give an even more vibrant color, if you have them, and generally are only available frozen (apart from a couple weeks a year in areas near where they grow).

    I decided to add yogurt to give that smoothness - almost like your cream or ice cream mixing in if you think in crumble terms - and oats to give a bit of thickness, a little like the crumble mixing in too.

    What to add for the 'crumble'?

    I mulled a little on quite how best to make a crunchy topping. I debated nuts and seeds but ended up with this combination of granola and chia seeds. They each give a bit of crunch, plus they look great being different colors as well.

    If you want to change things up, you can change to or add in some nuts, hemp hearts or some fresh chunks of fruit (though obviously fruit won't be as crunchy).

    This blueberry apple smoothie bowl takes no time to put together but the end result is delicious. It has a fantastic mix of smooth smoothie base and crunchy topping. Not to mention the fact it's full of healthy goodness as well. It makes a delicious breakfast or snack, so good I bet you'll want another again soon.

    Ingredients

    • ½ cup blueberries frozen, fresh or a mix; can also use wild blueberries
    • ¼ cup apple juice
    • ½ apple cored and peeled and cut into a few chunks
    • ¼ cup Greek yogurt plain
    • ¼ cup oats (quick or old fashioned)

    To top

    • 2 tablespoon granola
    • 1 teaspoon chia seeds

    Instructions

    • Place the blueberries, apple juice, chunks of apple, yogurt and oats in the blender and blend until well mixed. It doesn't need to be completely smooth, but is probably best if well mixed and on the smoother side.
    • Pour into a bowl and top with the granola and chia seeds - you can arrange them as I did around the outside or however you like! (You can also serve this in a glass, but I like having it as a bowl to be able to get the contrasting crunchy toppings.)

      Such an interesting flavor combination! I love smoothie bowls so much - I'm not sure why anyone would prefer a cup when you can make the bowls look so pretty!

      I honestly feel like apples don't get enough coverage when it comes to smoothies. I may be biased because I love them so much, but they really make such a huge difference in flavor and texture! This was delicious!
