    My husband has been traveling for work a bit more than usual these past few months and so I have had a few nights with just me and the kids. It's still not something I would want to do all the time, but it has been getting easier now that my youngest is getting older.

    At least now he can entertain himself a little and I can put them in the bath together but I've still, naturally, tended towards easy meals on those nights.

    A couple of months ago when my husband was on a longer trip my eldest somehow got in to a phase of wanting smoothie bowls for dessert each night. Given I tend to make them pretty healthy and they are quick to make, it wasn't something I was going to say no to.

    True, I didn't go for pretty toppings like I have on this mango and dragon fruit smoothie bowl, but this is still a really quick and easy smoothie to make.

    It's full of mellow fresh, tropical flavors. It's cooling and pleasantly sweet while still being super healthy with no added sugar and tons of vitamins, antioxidants and other good things. A perfect way to start the day, or end your meal.

    You might remember that I admitted being converted to smoothie bowls when I shared my wild blueberry and apple crumble smoothie bowl earlier in the year. I promised myself then that I must make some more smoothie bowls and particularly had summer fruits in mind.

    While you can get many tropical fruits year-round these days, there's something about the flavors that really feels like a perfect fit for summer, particularly when they are served cold like this. The flavors are mellow and light, just what you need on a warm day.

    I'll admit dragon fruit is not something I have had too often. Part of that is availability, particularly of the red variety which I prefer. Unfortunately, the red version apparently doesn't travel as well so it can be hard to find fresh outside of areas it is grown.

    Both white and red varieties look much the same from the outside, but red dragon fruit has that wonderful deep colored flesh. To me, and I know others agree, it has a more distinct and sweeter flavor than the white-fleshed variety. There's also a yellow dragon fruit which is easier to identify as it's yellow outside as well.

    If you only see dragon fruit without a label, chances are it's the white-fleshed version. You can use this instead and it will still be tasty, just your smoothie will not have that vibrant color (see made with white version below). Also, I don't think you taste it quite as much in the mix, but that may be me. Another possibly better option is using frozen red dragon fruit, also sometimes often labeled pitaya.

    Dragon fruit is often considered a superfood due to all its natural goodness. So along with the rest of the ingredients in here, with no need for added sweeteners, this smoothie certainly pack a healthy punch. You can also make these dairy free by using a nut-based milk such as almond milk.

    Making these mango and dragon fruit smoothie bowls could not be easier as you simply throw everything in the blender, whizz it up and pour it out. Exactly how cold it is depends on what you prefer and you can adjust the ingredients to be fresh or frozen versions to cool it down or not, as suits you (and depending on what you have available).

    So grab some tropical fruits and chia seeds and whip up this delicious, healthy smoothie. This mango and dragon fruit smoothie is great as a bowl but also just as good to drink from a glass. It's mellow and fragrant and sure to add some brightness to your day.

    Mango dragon fruit smoothie

    This refreshing smoothie is full of bright colors and fresh, tropical flavors. A great breakfast or snack.

    Ingredients

    • ¾ cup mango chunks fresh or frozen
    • ¾ cup dragonfruit flesh only, note you can't eat the pink skin
    • 1 banana fresh or frozen - you can slice up a banana and freeze the slices on a tray then put in freezer bag until needed
    • ¼ cup blueberries fresh or frozen
    • ½ lime juice (ie juice of half a lime, approx 1 tbsp)
    • ¼ cup milk dairy, almond or as you prefer
    • ½ tablespoon chia seeds plus approx another 1 teaspoon to top, optional
    US Customary - Metric

    Instructions

    • Place all ingredients in a blender and blend until smooth.
    • Pour into a bowl and top with some additional chia seeds and a few small chunks or slices of dragon fruit and mango.

    Note - the more frozen ingredients you add, the colder it will be, as well as it will be a bit thicker. If you want it less thick and less cold, use fewer, if any, frozen ingredients. You can also add additional milk and/or a little orange juice to thin it if needed.

      Such a great, healthy dessert for the kids on a weeknight! Perfect that they are easy too! They could want an ice cream sunday, so I would not have said no either!

      I also love how easy and healthy these smoothie bowls are, something I'm relatively new to but I like them as they're so versatile, yours sounds delicious with these tropical flavors, need to try it, thanks!

      Wow Caroline, that sounds yummy.
      I always want to save my dragon fruit for decorating so it never goes in a smoothie, but I bet it's really good!
