    Peach lassi

    This peach lassi is a thoroughly refreshing and delicious yogurt-based drink, perfect for warmer weather. Easy to make and easy to enjoy.

    Before I go any further, I need to get something out there. Every year I seem to get a bit of a peach and nectarine obsession. I hold myself back when I first see them in the supermarket, as I know the early ones can often not be as tasty, but once I start and realize they are good, there's no stopping me. And though I love eating them as they are, they are also good in things like this peach lassi that's perfect for a hot day.

    What is lassi?

    Lassi is an Indian and Pakistani drink made with yogurt, sometimes sweet and sometimes salty but always refreshing on a warm day. Fruit-based lassi is a common variation with mango lassi one of the most common.

    As you might imagine, it's delicious - I had one the other day since a certain bump is interfering with the beer option when I was out for a curry and it was so smooth and tasty. However it can also be very sweet and a little heavy for some occasions and I certainly couldn't have more than one glass.

    As I say, I'm a little into peach and nectarines in the summer, and don't stop at just eating them as they are. There's my peach and pistachio tart, grilled nectarine arugula salad, grilled peaches with mascarpone and basil peach margarita to name a few.

    This peach lassi is that little bit lighter and not quite as sweet as the more typical mango, but wonderfully fragrant and delicious. I added a little mint for an extra burst of summery freshness and it works really well with all the other flavors.

    This is a really quick drink to make, just whizz everything up and serve, and while you might think it's something you just have with curry, it is really great anytime you feel like a nice refreshing drink. It's much lighter than a milkshake but has that same creaminess, but also has the fruitiness and lightness of a juice or agua fresca. It's so easy to make, plus it's pretty good for you so make any excuse to get the blender out and whizz one up.

    Peach lassi

    Lassi is a common Indian drink, often made with mango but peach is also refreshing and delicious.

    Ingredients

    • 1 peach ripe
    • ¾ cup plain yogurt 180ml
    • 4 ice cubes approx
    • 4 mint leaves
    • 1 dash cinnamon
    • 1 teaspoon honey optional, or a little more to taste

    Instructions

    • Stone the peach and skin if your blender is not likely to break it up fully. I prefer to leave on if possible for color (plus it's easier)
    • Put the peach, yogurt, ice cubes, mint leaves and cinnamon in a blender and blend until well mixed and smooth. If you prefer a little sweeter, add honey to taste, blending it in.
    • Serve immediately while nice and cold.
